A first Jiro-style order

Choose a manageable portion and learn the branch’s topping-call rules.

Buy the bowl before extras

Check noodle size before ordering. “Small” can still be substantial. Ask about less noodles before preparation if available; extras are optional.

麺少なめでお願いします。
Less noodles, please.

ニンニクなしでお願いします。
No garlic, please.

When the topping question comes

At shops using a call system, the staff’s question is the cue for the options they offer. Garlic, vegetables and quantities vary. The long special phrase is optional.

Karame means stronger seasoning or more tare in the documented examples, not chili heat. Confirm the branch’s rule and avoid maxing every topping on your first visit.
