Tare

タレ

Tare is concentrated seasoning that helps set the final bowl’s character. Two soups made from similar stock can taste quite different after seasoning.

What to notice

A shoyu, shio or miso label usually tells you about seasoning, not every ingredient in the soup.

Try it with your next bowl

When tasting, give saltiness its own note rather than using “rich” for both salt and body.
