Tonkotsu

豚骨

Tonkotsu means pork bones. Its familiar creamy appearance comes from the way the stock is cooked, rather than being a definition of milk-based soup.

What to notice

A white broth alone does not identify its ingredients. Tonkotsu and tonkatsu, a breaded cutlet, are different words.

Try it with your next bowl

Try the shop’s default noodle firmness first, then compare a refill if one is offered.
